Tricolor Slaw

Ingredients:

  • 2 cups shredded green cabbage
  • 1 cup shredded red cabbage
  • 1/2 jicama cut into julienne (about 1 cup)
  • 1/2 yellow bell pepper, cored, seeded and thinly sliced
  • 1/2 sweet onion, peeled, thinly sliced and slices cut in half
  • 1/2 cup shredded carrot
  • 2 tablespoons chopped fresh mint leaves
  • Salt and freshly ground black pepper
  • 3/4 cup Marie’s Coleslaw Dressing

Directions:

Combine all ingredients; toss gently to coat with dressing. Cover; refrigerate 2 hours prior to serving. Toss again before serving.
