- 1 loaf Italian bread
- 3 oz goat cheese
- 4 tbsp olive tapenade or 2 tbsp olive paste
- 2 cups baby spinach leaves
- ½ cup Marie’s Caprese Dressing
- 2 tomatoes, sliced thin
Directions:Slice the loaf in half lengthwise. Spread the goat cheese evenly over bottom half of loaf. Spread the olive tapenade evenly over goat cheese. In small bowl, toss spinach with Marie’s Caprese Dressing. Add dressed spinach on top of olive tapenade then layer on sliced tomatoes. Cover with top half of loaf and cut into 4 sandwiches.
