Blue Cheese Portabella Mushroom Caps

  • 12 small portabella mushroom caps
  • 1 cup diced tomatoes
  • ½ cup chopped scallion
  • ½ cup blue cheese crumbles
  • ¼ cup bacon crumbles
  • ½ cup Marie’s Lite Blue Cheese Dressing


Spritz mushroom caps with olive oil spray and place on foil-lined baking pan.  In small bowl combine tomatoes, scallions, blue cheese and bacon and salt and pepper to taste.  Spoon the mixture into mushroom caps.  Bake for 15 minutes.  Serve with a dollop of Marie’s Lite Blue Cheese Dressing on each cap.
