Spicy Romaine Shrimp “Louis”

Ingredients:

  • 1 (12 ounce) jar Marie’s Thousand Island Dressing
  • 1 (18 ounce) bag romaine hearts (3 hearts)
  • 1/4 cup sliced green onion
  • 1 jalapeno, seeded and finely chopped*
  • 1 cup shredded carrots
  • 2 pounds cooked medium (31/40 per pound) shrimp

Directions:

Slice each romaine heart in half lengthwise. Combine remaining ingredients; toss well to coat with dressing. Spoon shrimp mixture over romaine halves.

Marie’s Tip: Wear gloves and do not touch eyes or face when working with chiles.
