Wash artichokes and trim tips of leaves. Place artichokes in a pot with a steamer insert and 1-inch of water, stem side up. Cover and bring to a boil. Let artichokes steam for about 10-12 minutes. Transfer to a cutting board and let stand until cool enough to handle. Slice the artichokes in half lengthwise. With a spoon, scoop out the fuzzy choke and discard.
Preheat grill or grill pan to medium. Brush each half with oil and season with salt and pepper to taste. Grill the artichokes until tender, about 5 minutes per side. Place artichokes on a serving platter, squeezing lemon over artichokes and serving with a side of Marie’s Asiago Peppercorn Dressing for dipping sauce.
