Salmon Taco with Yogurt Slaw

Ingredients:

  • 1 lb. fresh salmon filet
  • 1 tbsp olive oil
  • Salt and freshly ground black pepper
  • 8 corn tortillas, warmed
  • 2 cups shredded cabbage
  • ¼ cup Marie’s Yogurt Coleslaw Dressing
  • 2 tablespoons chopped fresh cilantro

Directions:

Brush fish with olive oil; season with salt and pepper. Line broiler pan with foil and set broiler to high. Broil fish for 5 minutes each side, or just until fish is cooked through.

Meanwhile, toss cabbage with Marie’s Yogurt Coleslaw Dressing. Warm the tortillas and transfer to serving plate. Add ¼ cup coleslaw on each tortilla. Add 2 oz. of fish to each taco and garnish with fresh cilantro to serve.
