Heat 1/2 inch of oil in large frying pan to 350ºF. Fry tortillas so they are crisp and remain flat. Drain well on paper towels.
Place one tortilla on each of four plates. Top each tortilla with 3 tomato slices, some of the sliced cucumber and 1/2 cup salad greens. Spoon 1 tablespoon of the Marie’s Jalapeno Ranch Dressing over each salad. Repeat for second layer. Finish by topping each salad with tortilla. Garnish each salad with 1/4 cup salad greens and 2 tablespoons dressing.
Marie’s tip: Add leftover roasted or rotisserie chicken to the layers for a fun entrée salad.
